Easy Christmas Chicken Noodle Soup

This soup is the best thing to have on a cold day. It is super easy to make and only requires 5 basic ingredients. If you don't have tiny bowtie noodles you can substitute them for elbow noodles, egg noodles, large bowtie noodles, or spiral noodles.

You can substitute the chicken breast for leftover turkey from Christmas dinner if you like.

Ingredients:

  • 1 can of chicken broth
  • 1 stalk of celery
  • 1 large carrot
  • 1 cup of tiny bow tie noodles
Cooking Instructions:
  1. Add 3 cups of water to a 2-quart saucepan.
  2. Add 1 can of chicken broth to the saucepan.
  3. Bring to a boil.
  4. Reduce heat to medium and add chicken breast.
  5. Chop celery and carrots finely and add them to the pan.
  6. Add salt and pepper to your taste.
  7. Cook over medium heat for 15 minutes, stirring occasionally.
  8. Remove the chicken breast and cut it into small pieces.
  9. Return the chicken pieces to the saucepan.
  10. Add the bow tie noodles.
  11. Cook another 10 minutes or until the noodles are cooked through.

Easy Christmas Oyster Stew

Another Easy Christmas recipe you might want to try is Oyster Stew. Served quick and hot with homemade bread it is a satisfying meal.

Ingredients:
  • 1 quart milk
  • 1 pint fresh oysters
  • 3 tablespoons butter
  • 3 tablespoons crushed crackers
  • salt and pepper
Cooking Instructions:
  • Heat the milk in a saucepan but do not boil.
  • Add the crushed crackers.
  • Drain the oysters and add the liquid to the milk.
  • Melt butter in frying pan.
  • Pour the oysters into the melted butter and cook until oysters curls, about 5 minutes.
  • Add salt and pepper to taste.
  • Pour oysters into the hot milk.
  • Simmer about 20 minutes.
